Knife is sharpened to a razor edge. This service is done on a 2" x 72" Burr King and finished on a Baldor buffer using a leather wheel. Blades are kept cool so overheating is not an issue. Forschner Knives: Forschner Boning Knife, 6" Granton Edge with Fibrox Handle, FO-5.6523.15


The illustrated Forschner Knife is the Forschner Boning Knife that features a 6" wide, stiff, curved granton edge blade made of high carbon stainless steel. The blade of this Forschner knife has the Victorinox logo etch. The handle is made from black Fibrox, and has been approved by the National Sanitation Foundation.

Victorinox kitchen knives feature high-carbon stainless steel blades which are hand finished by Victorinox in Switzerland. A special tempering process produces an edge that can be resharpened again and again. All Victorinox handles are ergonomically designed to minimize wrist tension.

I really like this knife for cutting boneless pork and serves well for trimming steaks. The Grantin edge helps this knife slide through the meat with little effort.
